Tonight we had: shell pasta stuffed with eggplants, onions and zucchinis and spelt cream, and also crunchy slices of tofu.

A spanish vegan omelet with tons of mushrooms and onions (and chickpea flour as binding). Side dish: salad, of course :).

Baked veggie casserole
Eggplant, potatoes, tomatoes and chickpeas baked with lots of fresh herbs and lemon with a fresh simple salad of lettuce, spinach and white cabbage.
Pasta al forno
Baked spaghetti with previously sauteed onions, garlic and mushrooms, soy cream and soy sauce, nutritional yeast, salt, pepper and shredded mozzarella cheezly. WOOOOW :)
